dried bean salad with feta, watercress,
endive, spicy wax peppers & a macadamia nut dressing

chilled brined pork loin ‘ham’ with tuna mousse,
pickled onions, croutons & creamy caper dressing

celery root and apple rémoulade with greens, pumpkin seeds,
grapes & honey vinaigrette

local fluke in a bouillabaisse broth with braised fennel,
leeks & a seared potato and leek cake

grilled marinated leg of lamb with potato goat cheese gratin,
kale and a spicy hazelnut & date sauce

beef bourguignonne with onions, potatoes,
mushrooms & bacon with carrot purée

pork pot roast with spicy kimchi of kohlrabi,
potato purée, & salsa verde

roasted loin of atlantic cod with turnip purée,
braised red cabbage, local prosciutto and pernod compote

chestnut & sausage stuffed roasted vermont quail with wild rice,
potato rosti and a cranberry grainy mustard glaze $9 supplemental

winter vegetable ragout with curry spiced squash & a seared herb rice cake

dessert  an individual selection of desserts
warm chocolate cake with salted caramel & orange custard sauce
